I have 2 Kitchen aid mixers. The first one was a 4 quart and it worked beautifully. It mixed well, dough blade worked well...so I thought I would upgrade to the commercial version of the mixer. There are 2 problems with this mixer: 1. The length of the blades (dough blade, whipping blade) are different lengths. So when you make whip cream with the whipping blade, my mixer works fine...but when you use the dough blade, it is shorter and does not reach all the flour or whatever is at the bottom of the bowl. This is a problem that needs to be fixed. 2. It seems to make a clicking noise when things get alittle heavy in the bowl (ie: when I made butter, I put whipping cream in the bowl using the whipping blade). When it was liquid...no noise...as it turned to whip cream (alittle noise) but when it turned closer to butter it was clicking (in the motor section not in the blades) KitchenAid needs to fix this...it is definitely not a commercial grade mixer other than a powerful motor...but if you can't properly mix things, what's the point ? Another issue is when you put the bowl in the mount, it is difficult to get the whipping blades on the mixer. you need to put that in the bowl first...then mount the bowl...then mount the blade. My old mixer (with the tilt back) was easy to mount the blades

I have gotten into baking homemade bread in past few years. I had been using my Kitchenaid Artisan Stand mixer. It did ok but as I started making more rustic and heavier dough, the Artisan would start to labor, so I decided to look for upgrade.I found the Kitchenaid Commercial, I could not find a great deal of information on this mixer, but I was happy enough withe my Artisan, so I decided to give the Commercial a shot, as it was much more powerful, had the upgraded dough hook, and large 8 at bowl. Again my main use would be bread dough. I got my new mixer Thanksgiving week 2015. Even though I purchased primarily for dough, my first task would be 10 lbs mashed potatoes for family thanksgiving. First let me say all the attachments are great heave quality, not that my Artisan are not good quality, but the Commercial attachments are over the top. This mixer knocked out 10 lbs of mashed potatoes in no time at all, and worked flawlessly. Next task, now for my bread dough. I did not do a large receipt, I had 3 cups of bread flour and 1 cup of cracked wheat flour, malt, yeast. I began to knead, the machine had plenty of power, but the bowl had movement and I could hear the metal bowl rubbing the bowl clip on the stand. I continued on with my knead for 8 minutes, the dough was great, but this bowl slip/noise really bothered me. The next day I tried with more dough, basically just to check out the problem. I made sure bowl was properly secured, and that the problem was not user error. It just did not seem to me that there should be any movement or metal rubbing or hitting noise, in a machine of this price. My smaller Artisan makes no noise, as the bowl does attach in different fashion. So I called Kitchenaid Customer Service, and man let me tell you, their CS is second to none. I explained my concern, the rep told me she was not in the Commercial department, but ask me to stay online, and she would bring a commercial rep into our conversation. After another explanation they informed me they wanted to replace my mixer, said they were shipping out a new unit and asks me to put my mixer in box of replacement box and send it back to them. You can't ask for anything more than that. My new mixer is great and quiet, no noise no problem. After comparing the two mixers, I think the problem was a defective bowl, not the mixer itself, regardless, they took care of me, and I am very pleased with the performance of this mixer, the size is a little bigger, but not a beast, on my counter. The commercial does not have a tilt head, that takes a bit of getting used to, but I understand the design is what it is. I have now had this mixer for about a month and have used it about half dozen times, and I am happy with my purchase. Don't think you can go wrong here, I am not a commercial baker, just wanted a premium mixer for home use making rustic bread dough, and I now have it.

I did a great deal of research on the various Kitchenaid mixers, as we just built a pizza oven and have a mile-long list of guests who want to come for dinner this next year! The mixer is being used for the thick dough, so I worried about the pull on the motor. I was SO thankful that one of the reviews I read suggested paying just a little bit more and going for this commercial model. My husband loves to cook, but has always used a hand-held Kitchenaide, but this machine has him sold on the stand mixer for dough!

I bought this mixer a week ago and have been using it everyday. I have a small food business and this commercial mixer is helping me increase the amount of bread I can sell. It is a life saver.
